Savour
from a kitchen that cooks in the Japanese manner on butter, ghee and tallow. The food is built to be eaten before bathing and slept on afterwards: warm, salted, easily digested, and never heavy enough to keep anyone awake. Almost everything is cooked a day or two before it is wanted and brought back up when the order comes.

Dashi is bonito and a light kombu; koji is rice koji, salted and cultured on site; rice is short grain. Anything cooked to order is said so on the menu. The kitchen will work around an allergy, an intolerance or a preference on the day, without notice.
Three night reset
Fifteen dishes arranged around your bathing. Broth and warm sugars before each immersion, shellfish on the second day, and stewed fruit with cream at night.
Four night program
Twenty dishes, beginning with a consultation on arrival. Temperature and pulse are taken each morning and the salt, sugar and dairy adjusted to what they tell us. Liver once, oysters twice.
